Eating well when you have fibromyalgia can be hard sometimes. You know that in order to have a healthy meal you probably need to cook it, but the thought of going to all that trouble can make you want to run hide. I’m trying to build a base of go-to meals that won’t involve a lot of time and effort for those days when I just don’t want to spend a lot of time in the kitchen. Oh, wait – that’s most days ha ha! Anyway, as I said before, I thought I’d share them as I think of them.
One of my favorite quick proteins is salmon. It cooks quickly, you can cook it in a variety of ways, and it’s delicious. This picture above is one of the very easiest meals on my list: salmon, sweet potato fries, and steamed broccoli. It takes less than 20 minutes, and only dirties three cooking containers. Here, I pan-seared the salmon, but if you don’t want to stink up your house, you can cook it in the oven with the sweet potato fries. If I cook it in the oven, I always put some sort of marinade or glaze on it to keep it from drying out. Keep a close eye on it too – there’s nothing worse than dry, over-cooked salmon. We don’t eat a lot of processed foods, but there are exceptions, and Alexia sweet potato fries are definitely one of them. I always steam my broccoli in the microwave because that’s the best way I’ve found to get it to just the right degree of doneness. After I steamed it, I put a little butter, a squirt of lemon juice, and some lemon zest on it. My husband is not a huge broccoli fan, but he really enjoys it like that.
If you’re not a sweet potato fries and broccoli kind of person, another great option is to have it with polenta and sauteed spinach. That takes about the same amount of time and is pretty simple as well.
Whenever I cook, I try to cook an extra portion of whatever protein I’m cooking so I can use it for another meal. In this case, the salmon went on top of a Greek-style salad for our dinner the next night. That only took 10 minutes to prepare!
Good nutrition is so important to keeping up our energy levels and feeling as well as we can with fibromyalgia that having some healthy meals we can cook quickly is critical.
